Speedy Spinach Pie 💪

Easiest spinach pie with a twist! 🌪️




🔹Serves 8 people at 200kcal per piece


🔶 Ingredients

1 sliced ​​leek (step 2)

2 chopped fresh onions (step 2)

3 tbsp. extra virgin olive oil (steps 2, 5, 6)

4 cups of fresh spinach (step 3)

1 tbsp. grated nutmeg (step 3)

salt & pepper (steps 3, 7)

optional spices turmeric, black cumin, ginger powder (step 3)

3 crust sheets (step 6)

2 large eggs (step 7)

140 gr. feta light (white low-fat cheese) (step 7)

200 ml milk 1.5% (step 7)

1 cup of bulgur or sweet trachana (step 9)


🔶 Directions

  1. Preheat the oven to 180 degrees Celsius. Spinach mixture

  2. In a non-stick pan, sautĂŠ the sliced leek and chopped onions with 1/2 tablespoon of olive oil until they become soft and translucent.

  3. Add the fresh spinach to the pan and season with grated nutmeg, salt, pepper and spices. Stir the mixture over medium heat for 7-8 minutes

  4. Remove the pan from the heat and set it aside. Prepare the baking dish

  5. Take a round 25cm or rectangular 10x20cm baking dish and brush the surface with olive oil.

  6. Place the crust sheets in the baking dish, making sure that the sheets cover the bottom and sides of the dish, making sure the sheets protrude higher than the sides of the dish. Use a brush to add the rest of the olive oil between the sheets. Egg mixture

  7. In a separate bowl, beat the eggs well.

  8. Add the milk, crumbled feta cheese, salt, and pepper to the bowl with the beaten eggs. Mix well to combine. Putting it all together

  9. Add the spinach mixture (from step 4) and the bulgur or sweet trachana to the egg mixture (from step 8) and mix everything together.

  10. Pour the mixture into the baking dish (from step 6) and spread it out evenly.

  11. Fold the excess crust over the edges of the spinach mixture and twist the foil to create a decorative edge. Bake and enjoy!

  12. Bake it in the preheated oven for 40 minutes or until the crust is golden brown and crispy.

  13. Remove the pie from the oven and let it cool for a few minutes before slicing and serving.


Here are some ideas on herbs and veggies that would pair well with this recipe, if you want to experiment:

  1. Fresh herbs: Marjoram, basil, and thyme are all great options that would complement the flavors of spinach, leeks, and onions. Try adding 1-2 tablespoons of chopped herbs to the spinach mixture.

  2. Mushrooms: Sliced mushrooms can add some meatiness to the pie and also provide additional nutrients. Try adding 1-2 cups of sliced mushrooms to the spinach mixture.

  3. Bell peppers: Chopped bell peppers would add some sweetness and crunch to the pie. Try adding 1-2 cups of chopped bell peppers to the spinach mixture.

  4. Zucchini: Chopped zucchini would add some additional texture to the pie and also provide some extra vitamins and minerals. Try adding 1-2 cups of chopped zucchini to the spinach mixture.

A good rule of thumb to ensure the filling stays creamy and moist, is to add one extra egg for every cup of veggies you add. Adding an extra 1/4 cup of milk can also help maintain the right consistency. Remember to keep an eye on the pie as it bakes, as the added veggies may increase the baking time slightly.
