Light Béchamel Sauce 🥛

Creamy, delicious and surprisingly simple to prepare! 💛✨
A lighter homemade béchamel made with just a few everyday ingredients. No butter needed! Perfect for your favourite moussaka, pastitsio or vegetable bake.
🔹 Makes approximately 1.2 litres — enough for one large moussaka
🔶 Ingredients
🔹 6 glasses unsweetened oat milk, soy milk or low-fat dairy milk (step 1)
🔹 6 heaped tbsp wholegrain flour, approximately 90–100 g (step 1)
🔹 A pinch of salt, to taste (step 4)
🔹 ¼–½ tsp ground nutmeg, or to taste (step 4)
🔹 Freshly ground black pepper, optional (step 4)
🔶 Directions
Pour the cold milk into a saucepan and gradually add the wholegrain flour.
Whisk thoroughly until the flour is completely dissolved and the mixture is smooth, without lumps.
Place the saucepan over medium heat, stirring constantly with a whisk. Continue stirring until the sauce begins to simmer and thickens to a smooth, creamy consistency. This should take approximately 6–10 minutes.
Remove from the heat and add a little salt, freshly grated nutmeg and black pepper, if desired. Mix well.
Your homemade béchamel is ready! Pour it over your favourite oven-baked dish while still warm.
Here are some ideas to experiment with:
Plant-based version: Use unsweetened soy or oat milk for a dairy-free sauce.
Extra flavour: Add a little grated cheese or nutritional yeast.
Different consistency: For a thicker béchamel, simmer a little longer. For a thinner sauce, gradually add more milk.
💡 Healthy U Tip: Using wholegrain flour adds some fibre compared with refined white flour. Choosing the type of milk also allows you to adjust the protein content and flavour of your sauce.
Simple ingredients, delicious results!
Enjoy! 🍽️
