Mushroom Skewers 🍄🌿
Just perfect for sharing!

These delicious mushroom skewers combine the rich flavour of balsamic vinegar with garlic, thyme and olive oil.
🔹 Serves 4 as a side dish
🔶 Ingredients
🔹 500 g large champignon mushrooms (steps 1, 5)
🔹 50 ml balsamic vinegar (step 2)
🔹 2 tbsp soy sauce, optional (step 2)
🔹 3 garlic cloves, thinly sliced or crushed (step 2)
🔹 1 tbsp fresh thyme leaves, or 1 tsp dried thyme (step 2)
🔹 Salt and freshly ground black pepper, to taste (step 2)
🔹 2 tbsp extra virgin olive oil (step 6)
🔶 Directions
Clean the mushrooms and cut them into thick slices, approximately 1 cm each. Depending on their size, each mushroom should provide around three slices.
Place the mushrooms in a large bowl. Add the balsamic vinegar, soy sauce, garlic, thyme, salt and black pepper. Mix gently until all the mushrooms are coated.
Leave the mushrooms to marinate for approximately 30 minutes, allowing them to absorb all those delicious flavours.
Meanwhile, soak wooden skewers in water for at least 30 minutes to reduce scorching. Preheat the oven to 230°C using the grill setting.
Thread the mushroom slices onto the skewers, approximately 4–5 slices per skewer, depending on their size.
Arrange the skewers on an oven-safe rack over a lined baking tray. Brush lightly with olive oil.
Grill for approximately 10 minutes, then carefully turn the skewers and cook for another 5 minutes, until the mushrooms are tender and lightly caramelised. Watch closely, as grill temperatures can vary.
Serve warm with your favourite dip or fresh salad!
Here are some ideas that would pair well with this recipe, if you want to experiment:
More vegetables: Add bell peppers, red onions or zucchini between the mushroom slices.
Extra herbs: Experiment with oregano, rosemary or marjoram.
A Mediterranean touch: Add a squeeze of fresh lemon juice just before serving.
A little sweetness: For a sweeter marinade, try adding a teaspoon of honey or maple syrup.
💡 Healthy U Tip: Mushrooms bring umami flavour to a dish, helping create satisfying plant-based meals. Pair these skewers with a source of protein and wholegrains for a more complete meal.
Make these for your next family dinner or gathering!
Enjoy! 🍽️
