Tanomenon Sorva - Yoghurt Soup 🥣🌿
A warm bowl of tradition! 💛✨

This traditional Pontic Greek soup combines tender cracked wheat, creamy yoghurt and aromatic spearmint. A simple, comforting recipe passed down through generations, using just a few wholesome ingredients.
🔹 Serves 6
🔶 Ingredients
🔹 1 cup cracked durum wheat (korkoto) or bulgur (steps 1, 2)
🔹 1.5 litres water, plus extra if needed (step 2)
🔹 2 cups plain yoghurt, approximately 450–500 g (step 4)
🔹 3 tbsp cow's butter, approximately 45 g (step 6)
🔹 1 tbsp dried spearmint (step 6)
🔹 Salt, to taste (steps 2, 4)
🔶 Directions
Place the korkoto or bulgur in a sieve and rinse thoroughly under cold running water.
Add the water, cracked wheat and a little salt to a large saucepan. Bring to a boil, then reduce the heat and simmer until the grains become tender. Bulgur may take 15–20 minutes, while traditional korkoto can require 30–45 minutes or longer, depending on its coarseness.
Once the wheat has softened, remove a few ladles of the hot cooking liquid and set aside to cool slightly.
In a separate bowl, whisk the yoghurt with a small pinch of salt. Gradually add the reserved warm cooking liquid, a little at a time, whisking continuously until you have a smooth mixture.
Remove the soup from the heat. Slowly pour the yoghurt mixture into the saucepan, stirring gently until evenly combined. Avoid boiling the soup after adding the yoghurt to prevent curdling.
In a small frying pan, gently melt the butter over low heat. Add the dried spearmint and stir briefly until fragrant, taking care not to burn it.
Immediately pour the butter and spearmint mixture into the soup. Stir gently and serve warm!
Here are some ideas that would pair well with this recipe, if you want to experiment:
A different grain: Try fine bulgur if traditional korkoto is unavailable, adjusting the cooking time.
Fresh herbs: Add a little fresh spearmint just before serving.
A lighter variation: Reduce the quantity of butter if preferred, while keeping the traditional spearmint flavour.
Extra texture: Adjust the amount of water depending on whether you prefer a thick or more liquid soup.
💡 Healthy U Tip: Combining yoghurt and wheat provides carbohydrates, protein and calcium in one comforting dish. Choosing a minimally processed wholegrain version of cracked wheat can also increase fibre.
Sometimes the simplest traditional recipes are the ones we treasure most!
Enjoy! 🍽️
