Better-for-You Banana Bread🍌

A baked banana bread

🔹Serves 12 at 230kcal per piece


🔶 Ingredients

🔹225 g wholewheat flour (step 2)

🔹150 g date sugar (step 2)

🔹1 tsp soda bicarbonate (step 2)

🔹1 tsp baking powder (step 2)

🔹1 tsp ground cinnamon (step 2)

🔹½ tsp salt (step 2)

🔹60 g rolled oats (step 3)

🔹1 tbsp flax seeds (step 3)

🔹1 tbsp chia seeds, plus extra for decorating (steps 3, 5)

🔹4 ripe bananas, 3 cut into quarters, 1 for decorating (steps 4, 5)

🔹1 egg (step 4)

🔹140 g yoghurt (step 4)

🔹45 g olive oil (step 4)

🔹1 tsp vanilla extract (step 4)

🔹1 tbsp date syrup, for drizzling (step 5)


🔶 Directions

  1. Preheat the oven to 160 degrees Celsius. Line a loaf tin (12.5 x 24 x 7 cm) with baking paper. Prepare the mixture:

  2. In a mixing bowl, combine wholewheat flour, date sugar, baking soda, baking powder, cinnamon, and salt.

  3. Add oats, flax and chia seeds. Mix well to distribute evenly.

  4. Add the quartered bananas, egg, yogurt, olive oil, and vanilla extract. Mix everything well together. Bake and decorate:

  5. Pour the mixture into the prepared loaf tin. Slice the last banana into 4 thin slices, and place on top of the banana mixture. Sprinkle with extra chia seeds and drizzle with date syrup.

  6. Bake in the preheated oven for 60 minutes or until a knife inserted into the center comes out clean.

  7. Let the banana bread cool in the tin for a few minutes before serving warm!


Here are some ideas that would pair well with this recipe, if you want to experiment:

  • Chocolate Chips: For a sweeter treat, add dark chocolate chips to the middle layer of the loaf tin before baking.

  • Nuts and Seeds: Add a handful of walnuts or pumpkin seeds to the mixture for added crunch and nutrients.
